Guilt-Free Crispy Chicken


For as long as I can remember Fried Chicken has been a world-renowned comfort food because of its flavor and convenience. Fast-food and dine-in restaurants all over the world offer different variations of this crunchy and juicy entree. You can prepare your fried chicken bone-less and eat it sandwich-style, chopped into bite sizes and eat it popcorn-style for a nutritious snack, or my favorite, bone- in and pick it up with your fingers and bite right into it! But why it is so popular!??


1. It's messy, time consuming to prepare, and cook and 2. the entire time you are praying the oil doesn't splash back at you and burn you. Let's not forget more often than not you end up with the oily fingers and messy face.


Let's not worry about why's and change this popular meal Easy, nutritious, and most importantly, Guilt-Free!

Ingredients:

2lbs of Chicken drumsticks

3 large eggs

1oz Milk (optional)

1oz Lime juice

2 Tsp Paprika

2 Tsp Onion Powder

Dash of Salt and Pepper

4 cups of Chicharon (2 cups of blended Chicharon)


Prepare Ingredients:

  1. Wash your chicken under cold water. Tap dry with paper towels and set aside in a bowl to dry.

  2. Beat your eggs (option to add milk) and add the lemon juice. Set aside in a bowl.

  3. Blend the Chicharon ½ cup at a time (set aside each batch) until all chunks are in a powder form.

  4. Add all seasonings to the blended Chicharon mix and set aside on a flat plate.

Cooking Directions:

  1. Preheat the oven to 400 degrees. Wrap your baking sheet in non-stick foil (shiny side up)

  2. Dip one chicken piece at a time into the egg/lemon mixture leaving and then lay on the plate with the Chicharon/ seasoning mix covering all sides. Place on your baking sheet Repeat for each drumsticks.

  3. Bake for 40- 50 minutes or until breaded skin is a golden brown. Test: touch the chicken and the breading should NOT flake off.
