The Super Bowl You Can Enjoy All Year Long!


No I am not talking about Football; we are talking about Food! Sorry sports fans, however, this is a show you don’t want to miss.

My favorite meals are those I can mix and enjoy all the flavors together and this one takes first place in my book! Ground Turkey is one of the top leanest meats you can eat and my go-to choice for protein. But being one of the leanest proteins you also run into the problem of it lacking the flavors and juices that come from the fat that we taste in red meat. Let’s be honest, we LOVE our red meat! However, a healthy diet is about balance and unfortunately we can’t eat a Filet Mignon everyday.

My Super Bowl is a quick and easy recipe filled with lots of flavors guaranteed to have all ground turkey nayers asking for this recipe!

Servings: 3-4

Ingredients:

1 lb Ground Turkey

1 Roma Tomato

1 White Medium Onion

1 Serrano Pepper

5 Large White Mushrooms

6 garlic cloves

1 red bell pepper

1 green onion (garnish)

1 red radish (garnish)

1 cup of long grain white rice (option today substitute with brown rice)

7oz tomato sauce

2 cups of water

Seasonings: 1tsp of each- seasoning salt, cumin, ground oregano, dash of salt and pepper.

Prepare Ingredients:

Wash all your vegetables under cold water and chop/slice on a clean surface. Create two separate spaces and separated vegetables as directed below.

1 Roma Tomato- cut off and throw away both ends and deseed. Chop into medium pieces and set aside.

1 White Medium Onion- slice into medium thin slices and separate into two halves. Add 1/2 to your tomatoes and place the other 1/2 to the side.

1 Serrano Pepper- chop off both ends and throw away and deseed. Chop your pepper into small pieces and add to your tomato/ onion mixture.

5 Large White Mushrooms- remove the stems. Throw away your stems or slice into long slrips and add to your mushroom pile. Slice your mushroom heads into thin vertical slice and add to your tomato/ onion/ serrano pepper mixture.

6 Garlic Cloves- mince, chop, slice.... You choose! I love garlic so any style you choose will be perfect for your meal. Add 1/2 to your tomato/ onion/ serrano pepper/ mushroom mixture and the other half to your only onion mixture.

1 Red Bell Pepper- cut off both ends and remove the seeds and pith. Chop into medium pieces and add to your onion/garlic mixture.

Cook your Meal:

1. Heat a medium-size pan and pot each with 2-3 Tbsp of Olive Oil on medium-high.

2. Once your pan and pot are warm lower to medium heat.

3. Read below for separate instructions. Cook simultaneously.

Turkey and Vegetables- Pan: add your tomato/ onion/ serrano pepper/ mushroom/ red bell pepper mixture to your warm olive oil and continuously stir until vegetables are al dente. Add your Seasonings: 1Tbsp of each- seasoning salt, cumin, ground oregano, dash of salt and pepper. Stir and add your ground turkey and mix thoroughly. Cook until turkey begins to golden.

Rice- Pot: add your onion/garlic mixture to your heated olive oil. Continuously stir to avoid the garlic from burning. When the onion and garlic begin to brown add your 1 cup of rice and cook for 2-3 minutes. Season with seasoning salt and table salt. Add 2 cups of water and 7oz of tomato tomato sauce. Stir and raise heat up medium-high until water boils. When the water is boiling lower heat to medium-low and cover pot. Cook for 20-25 minutes or until rice is thoroughly cooked. Remove from heat to avoid overcooking or burning.

*option to use a rice cooker and include all ingredients in the directions above.

Enjoy your Meal!:

Nothing about this meal is "pretty" so have fun with it! Serve your rice on the side or as a bed for your ground turkey and vegetables. I love to dress it up with chopped radishes, cilantro and green onions.
