Morning Egg-Croissant Ring

Who cares!

We all love to eat and need food to live but more often than not we skip the most important meal the day, Breakfast. I'm not sure about you but I will admit to hitting the snooze button once.... maybe twice, just so that I can sleep an extra few minutes. Of course this means I end up running around my house like a chicken with its head cut off trying to get ready for my day and out of the house on time.

But no matter how my morning is going, I still need to eat a nutritious breakfast so that I am energized and ready for my day. In the past I used to skip breakfast and I noticed that I was tired, unproductive, and my appetite was nearly nonexistent for the rest of the day. The older I got the more I understood the importance of having a regular eating pattern in order to maintain a fast metabolism. With a fast metabolism, your body takes in the food and breaks it down into different nutrient compounds consisting of amino acids, fatty acids, and simple sugars. The compounds are released into the body and used to fuel the body and burn as energy. Of course this meant no more skipping meals, eating every 3 hours and making sure my meal sizes were all proportionate to each other.

Breakfast foods is something I hardly ever crave or look forward to, which is why it was so easy for me to skip breakfast in the past. Unfortunately we can't have a steak or sushi for breakfast so I knew I had to find a way to make breakfast fun, tasty and something I can prep the night before or when I'm ready to eat. Eggs are a great source of protein but can be boring!!! There are only so many hard-boiled or scrambles eggs I can eat before I am egged out!

Get out of your comfort zone, step into your kitchen and make my Morning Egg-Croissant Ring for a family/friend breakfast or as your breakfast meal prep for the week.

Ingredients:

5 eggs

1/4 cup of cherry tomatoes

1/2 cup of raw kale

1/2 white onion (small)

3 mini red bell peppers

1/2 serrano pepper

1 roll of croissant rolls (8)

2 Tbsp of olive oil

1 tsbp butter

(optional) Your choice of protein or tofu (2oz)

Servings: 2-4

Directions:

1. Heat a medium pan on medium/high heat. Drizzle the olive oil on the pan to warm up.

2. Chop the cherry tomatoes, onion, bell peppers and kale (cut off stems). Once the pan is heated up, place the chopped vegetables on the pan and cook until soft (not golden). Option to add cooked protein. Season with pepper, pink himalayan salt and seasoning salt

3. While the vegetables cook, mix the 5 eggs in a bowl until thoroughly beat together. Slightly lower the heat on the vegetables and add the eggs to the mix. Continue to stir the eggs until thoroughly cooked. Turn off the heat and place to the side.

4. Preheat the oven to 350. Line a baking sheet with foil and spray non-stick spray.

5. Open the croissant roll package and separate each croissant.

6. With the thinner/pointy end sticking out, form a circle shape with the corners of each roll touching each other.

7. Once all the corners are pinched together, place the egg and vegetable combinations on top of the croissant dough (keep as much as possible from falling off, following the ring shape).

8. Bring the pointed edges in and pinch below to keep the croissant roll from separating.

9. Mighty coat dough with melted butter.

10. Bake for 10-12 minutes, or until a mighty golden color on the outside.

Dress Me Up/ Meal Prep: Serve with your favorite fruit. Cut the ring into fourths and place into tight seal containers to keep in the refrigerator.

Great for Meal Prep! Heat for 45 seconds in the microwave
